Mashed Radishes

If you are expecting a potato, you will be disappointed - because these do taste like radishes. BUT radishes are delicious - and this is an awesome, low carb, substitute for mashed potatoes. Give it a try! Plus, they add a pretty pink to your plate...

 12 oz Radishes
 ¼ cup Butter
 4 tbsp Heavy Whipping Cream
 1 tbsp Minced Garlic
 Crushed Red Pepper - to taste
 Himalayan Pink Salt - to taste

Fill a pot with water and place on stove. Add a teaspoon or two of Himalayan Pink Salt to the water.

Cut the ends off of the radishes and cut them in half. Do not peel them. Add them to the water and bring to a boil.

Boil the radishes for about an hour - or until they are soft enough to mash.

**I used a food processor to mash them because the electric mixer was not doing the job. Next time, I will boil the radishes longer and see if that makes a difference - or if the radishes got as soft as they are going to get.

Drain the radishes and place into the food processor. Add the butter, heavy whipping cream, garlic, crushed red pepper and Himalayan Pink salt. Continue to mix and add salt/pepper until desired taste.
