I seasoned the chicken with nature’s seasoning and Cajun seasoning. I grilled it on our griddle and once the chicken reached 165 degrees, I sliced fresh, whole milk mozzarella and put the slices on top of the chicken. Once it was melted it was time to feast.
In a skillet, melt a 1/4 cup of butter. Add the frozen cauliflower rice to the skillet once the butter has melted. After the cauliflower has thawed in the skillet, add another 1/4 cup of butter to the skillet, along with Cajun seasoning, pepper and Pink Himalayan salt. You’ll want to stir and cook the cauliflower for a good 30 minutes. The longer you cook the cauliflower, the softer and more rice like it will become.
